Spicy Watermelon Margarita Recipe
With Summer in full swing now and temperatures climbing to be hot AF in Boston, I cannot think of a better way to cool down than with a watermelon margarita. Tim made me this a couple weeks ago and 97% of you wanted to see his recipe! It can be made spicy or not. In our household, we love spicy margaritas, so that is what we did! The watermelon syrup did take Tim a little bit to make, but once it is done it is worth it! He was so gracious as to share his recipe with me so here it is!
To make watermelon syrup combine 1 cup watermelon juice (puree watermelon then strain out the pulp with fine mesh strainer) with 1/4 cup plain white sugar and heat to a simmer on the stove mixing to dissolve sugar. Let mixture simmer over medium to medium/low heat until it has reduced and become syrupy, at least half an hour depending on how furiously the mixture simmers.
Combine ingredients in your preferred cocktail shaker along with a handful of ice. If you want it spicy, include a few large chunks of jalapeño (with ribs and seeds) as well to incorporate some spice as you shake. Shake to thoroughly combine, at least 10 seconds. Strain into a fresh glass with ice. Garnish with a lime wheel and a few slices of jalapeño to keep some heat in there as the ice melting mellows the drink!
Ingredients make one spicy margarita. Yes, you usually only need an ounce or so of lime juice in a regular margarita but this will require more watermelon to balance out the strength of the tequila flavor.
